On May 11th, our Chef Tom Aikens graciously welcomes Chef Zaiyu Hasegawa of Den in Jingumae, Tokyo, as a guest chef for the 4-Hands Dinner and this unique dinner, available for one evening only, presents a collaboration between two esteemed Michelin-starred chefs.

Den, under the leadership of Chef Zaiyu Hasegawa, stands as one of the world's most coveted dining destinations, embodying a "new form of Japanese cuisine" characterised by playfulness and hospitality, while upholding reverence for seasonal ingredients and Japanese culture. The cuisine exudes the comforting warmth of home cooking and has captivated guests from Japan and beyond, as well as fellow chefs. In 2022, Den claimed the top spot in "Asia’s 50 Best Restaurants" and ranked an impressive #11 in the "World’s 50 Best Restaurants". The restaurant earned its second Michelin star in 2023 and has also been honoured with the Green Star, a new Michelin distinction recognizing sustainable gastronomy.

Tom Aikens made culinary history as the youngest British chef ever to attain two Michelin stars, achieving this feat at the age of just 26. In recent years, he has garnered numerous accolades, including a Michelin star in January 2021 for his London-based restaurant Muse, which debuted in 2020.

“Den” Zaiyu Hasegawa Biography

Zaiyu Hasegawa, the owner-chef of "Den", a renowned Japanese restaurant, was inspired by his mother, a Geisha, who would bring home Bento from the prestigious Ryotei where she worked during his childhood, igniting his passion for cooking.
Following his high school graduation, he embarked on his culinary journey as a live-in apprentice at the esteemed Japanese restaurant "Kagurazaka Uotoku" at the age of 18. After honing his skills through various culinary experiences, he took a bold step at the age of 29, opening Den in Jimbocho, Tokyo, in 2008. Within just three years of its inception, Den was awarded two stars in the "Michelin Guide Tokyo 2011." Den's cuisine breaks free from conventional Japanese culinary norms, offering a fresh interpretation that celebrates Japan's bountiful ingredients, the beauty of its four seasons, and rich cultural heritage.

Tom Aikens Biography

Born to a father who worked in the wine industry, his childhood was spent in Norfolk gardening and cooking with his mother. Tom learned how to use fresh ingredients and put food at the centre of his life from an early age.

After attending Norwich City College Hotel School and graduating with a degree in Advanced Catering in 1989, he began his career at the Michelin-starred Cavalier restaurant in Battersea, London. After moving to The Capital Hotel working under Philip Britten, followed by a chef-de-partie position with Pierre Koffmann at La Tante Claire at a time when the restaurant was awarded with its third Michelin star.. He then worked for Joël Robuchon in Paris, Gérard Boyer in Reims and Pied-ta-Terre. At Pied-ta-Terre, he became the youngest British chef ever to receive two Michelin stars at the age of 26.
