Kyushu is a treasure trove of food, blessed with a warm climate and abundant nature. Not only is it known for its ancient shochu and sake, but it is also known as a high-quality wine-producing area, attracting passionate attention from Japanese wine lovers. This time, we will focus on the hot Kyushu alcoholic beverages, and enjoy a pairing dinner accompanied by a multi-course meal using carefully selected ingredients from the same region.
Pairings include Anshinin Wine Studio in Oita Prefecture, the only winery in Western Japan to be selected as a five-star winery, Kikuka Winery in Kumamoto Prefecture, a regular winner of the Japan Wine Competition, and Tsuno Wine in Miyazaki Prefecture, which is brewed with 100% locally grown grapes, based on the belief that ”brewing culture” We will be offering a selection of notable local specialties, including "HITOYA," a shochu with a complex and elegant taste thanks to long-term storage, and "Tanaka Rokugo," known for its "Onko Soushin" sake, which combines traditional methods with modern technology.
The dishes served during the dinner course are made with a selection of ingredients from the seven Kyushu prefectures, including richly flavored sinewy dishes from Nagasaki Prefecture, as well as high-quality meats such as black beef from Kagoshima Prefecture, Yuba from Fukuoka Prefecture, red eggplant and amaka from Kumamoto Prefecture, and fresh seasonal vegetables from Saga and Oita Prefectures With the chef's skill, he brings the power and individuality of ingredients from various regions, nurtured by the Kyushu culture, to his dishes.
